Chocolate Peanut Butter Cream Pie

Chocolate Peanut Butter Cream Pie ~vegan~ Fluffy, silky and oh so decadent!

Fluffy, silky and decadent…um, yea!

No bake, few ingredients and simple to make…can it get any easier!?!

Back in the day my best friends and I would go to Friendly’s and get their mega Reese’s Pieces Sundae, remember those???  I can only imagine the ingredients used, I’m sure they were not the healthiest!  Here is something that’s even better tasting, and not so horrible for you!

Ingredients
  • 1 pound block of silken tofu (organic, Non-GMO, such as Nasoya)
  • ⅔ cup all natural peanut butter
  • ⅓ cup pure maple syrup
  • ½ teaspoon pure vanilla extract
  • ½ cup chocolate chips (I use Enjoy Life), melted
  • 1 cookie pie crust, homemade or pre-made (see recipes below!)
  • For the chocolate drizzle:
  • ½ cup chocolate chips
  • 1 tablespoon coconut oil
Instructions
  1. Add tofu, peanut butter, maple syrup and vanilla to a food processor. Blend until whipped and creamy.
  2. Melt chocolate chips in a double boiler or microwave. Add melted chocolate to food processor and blend until well combined.
  3. Pour mixture into pie crust and place in refrigerator for 2-3 hours or until chilled.
  4. For chocolate drizzle sauce:
  5. Melt chocolate and coconut oil in a double boiler or microwave.
  6. Serve pie with chocolate drizzle (optional, but well recommended!)

I used a pre-made chocolate cookie crust…no judging!  Arrowhead Mills makes a vegan graham cracker crust and Mi-Del makes a gluten free chocolate cookie crust.  If you want to make your own, it’s simple!  All it takes is a sleeve of graham crackers of your choice, crushed and mixed with a few tablespoons of melted coconut oil or vegan butter.

Peanut Butter Oat Cookies, a friday night family favorite!  

Peanut Butter Oat Cookies ~vegan and gluten free~ Simple to make and healthy!

Peanut butter cookies remind me of my childhood….both homemade and store-bought nutter butters!  Here’s a healthier version with less sugar and no butter, hydrogenated oil or eggs!  Plus, they are gluten free!  I adapted my mom’s old recipe by substituting quick oats in place of flour, which adds more fiber!  Instead of eggs I used a flax egg, but you can use an egg or your favorite egg replacer.

They are just slightly sweet…enough to satisfy a sweet tooth without sending you into sugar shock!

Serves: 16-18 cookies
Ingredients
  • 1 flax egg (1 tablespoon flax meal + 3 tablespoons warm water)
  • ½ cup smooth all natural peanut butter
  • ⅓ cup light brown sugar, packed
  • ¼ teaspoon pure vanilla extract
  • 1 tablespoon soy or almond milk
  • 1¼ cup quick oats
  • ½ teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper, set aside.
  2. In a small bowl, mix flax meal and water. Set aside for 10 minutes until a gel is formed.
  3. In a larger bowl, cream together peanut butter and brown sugar using an electric mixer. Add flax egg, vanilla and almond milk.
  4. Stir in quick oats and baking soda.
  5. Using a tablespoon, scoop out dough and roll into a ball. Place on parchment paper and gently press with a fork.
  6. Bake for 8-12 minutes or until lightly golden on the top.

I left mine in for the full 12 minutes to crisp up the tops while staying perfectly chewy in the middle!   Keep an eye on them as all ovens cook differently.  Look for gluten free quick oats if gluten sensitive!  Let cool before diving in and store in an air-tight container.

If you’re like us, dogs are not just pets, they are the heart of the family!  Belly (our pug) is the best worst dog anyone could ever ask for!  Super fresh and stubborn as most pugs are, but at the same time so loving and sweet…it’s hard to stay mad at them!  Just look at that face!

To show my pup some extra love, I baked him a batch of these cookies!

  • 1 ripe banana, mashed
  • ½ cup peanut butter
  • ¾ cup wheat germ
  • ¼ cup chopped peanuts
Instructions
  1. Preheat oven to 325 degrees, line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, add mashed banana, peanut butter, wheat germ and chopped peanuts. Mix until well combined and a dough is formed. (If dough is too thick, add a tablespoon of warm water at a time until a desired consistency is reached.)
  3. Divide dough into two balls. On a floured surface, roll out dough and use a cookie cutter to make treats. Place evenly on the cookie sheet and bake for 15-25 minutes (depending on size of cookie cutter used) or until crisp on the edges and firm to the touch.
  4. Let cool and feed to your favorite pup!
