  • 1 pound carrots peeled and sliced
  • 1-2 tablespoons olive oil
  • ¼ cup orange juice
  • 2 cloves garlic minced
  • 1 tablespoon maple syrup
  • ½ teaspoon cumin
  • ¼ teaspoon cinnamon
  • ¼ cup golden raisins
  • ¼ cup slivered almonds
  • 2-3 tablespoons fresh parsley
  • sea salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees.
  • Add all ingredients in a bowl and toss to coat.
  • Transfer to a baking dish and bake for 20-30 minutes or until carrots are tender crisp.
