Mini Salted Peanut Butter Parfaits, made with only 3 ingredients!!!

Mini Salted Peanut Butter Parfaits ~vegan, gluten free, dairy free~ Made with only 3 ingredients!

Coconut cream blended with peanut butter and maple syrup for a decadent dessert…oh yea, and a little chocolate sea salt dusted on top, which technically makes 4 ingredients!  Yes, chocolate sea salt is a real thing!  I bought mine at a specialty spice store, but I’ve seen it at Whole Foods before.  The peanut butter coconut cream is layered with chopped peanuts for crunch.  This step is totally optional, but it sure does look pretty!

I love when restaurants serve mini-desserts.  It’s just enough to satisfy your sweet tooth without making you feel too full and over-stuffed!  This dessert is so rich that just a few bites will do!  You can also use this recipe as a frosting for chocolate cupcakes.

The recipe is adapted from The Minimalist Baker and makes 4 mini-parfaits.

Ingredients
  • 1 can full-fat coconut milk
  • ¼ cup chunky or creamy all natural-peanut butter
  • ¼ cup pure maple syrup
  • pinch chocolate sea salt or coarse sea salt
~peanuts for layering if desired~
    Instructions
    1. Place unopened can of coconut milk in the freezer overnight (or for at least a few hours).
    2. Open can and scoop out coconut cream, place in a small bowl.
    3. Add peanut butter and maple syrup to bowl and using a hand-held mixer blend until creamy.
    4. Divide into 4 mini-parfait glasses and layer with peanuts.
    5. Top with a pinch of chocolate sea salt or coarse sea salt.
    6. Enjoy!
    ~For best results, eat immediately or store in the refrigerator and serve at room temperature~

      Chocolate Chai Truffles!

      These little "truffles" are made from date paste, oats, spices and cacao...a heavenly scented sweet treat!

       I love all the flavors and spices fall brings, but I am so sad to say goodbye to the summer!   I’m not ready to go full-blown pumpkin spice yet, so I will start with chai :)

      These little “truffles” are made from date paste, oats, spices and cacao…a heavenly scented sweet treat!  I keep a batch of date candy or no-bake bars in the refrigerator for a little pick me up during the day or as a healthier way to satisfy my love of dessert!  They are kid approved too!

      Chocolate Chai Truffles, a heavenly scented sweet treat! Makes 26-28 truffles

      Ingredients
      • 2 packed cups medjool dates, pitted
      • 1 tablespoon coconut oil
      • 2 tablespoons strongly brewed chai or black tea
      • ½ cup coconut sugar
      • 1 teaspoon pure vanilla extract
      • 1.5 cups old fashioned oats
      • 1 tablespoon cacao powder
      • ½ teaspoon cinnamon
      • ¼ teaspoon ground nutmeg
      • ⅛ teaspoon ground ginger
      • 2 healthy pinches of sea salt (I use course pink sea salt)
      • ¼ cup unsweetened coconut flakes
      Instructions
      1. Place pitted dates in a food processor and pulse until a paste is formed.
      2. In a large frying pan over medium-low heat add coconut oil, date paste, tea and coconut sugar. Stir mixture until well combined and cook until bubbling. (around 3-5 mins.) Remove from heat and stir in vanilla. Set aside and let cool.
      3. In a large bowl mix together oats, cacao powder, cinnamon, ground nutmeg, ground ginger and sea salt. Add cooled date paste mixture and stir until well combined. (this step takes some elbow grease!)
      4. Using a tablespoon, scoop out mixture and use palms of hands to roll into a ball. Roll in coconut flakes until covered.
      5. Store in refrigerator.
      6. Enjoy!

      What is coconut sugar?

      Coconut sugar is made from the sap of the coconut palm plant.  It is light brown in color, similar to the color of light brown sugar.  However, it is not as sweet as regular white sugar or brown sugar.  Unlike white sugar, it contains trace amounts of nutrients such as iron, zinc and potassium.  The constitution of coconut palm sugar is also different than white sugar.  To best explain it, here is a blurb off of Dr. Weil’s website, “coconut sugar is 70 to 79 percent sucrose and only three percent to nine percent each of fructose and glucose. This is an advantage, because you want to keep your consumption of fructose as low as possible, and cane sugar is 50 percent fructose.”   But, don’t forget…sugar is sugar and it’s best to consume in moderation!

      Simple chocolate dipped apple slices with graham cracker crumbles, sunflower seeds or shredded coconut!

      The end of school brings class parties!  Instead of letting your kids get tanked up on super sugary snacks, try incorporating fruit into sweet treats.  Fruit contains fiber, which help stabilize glucose preventing a sugar rush of epic proportions!

      These got the thumbs up from my nephews!  They were happy to have dessert, I was happy they were eating apples!  They even asked if I would make them again…no problem, done in under 20 minutes!

      Ingredients
      • 3 green apples, thinly sliced
      • 1.5 cups dark chocolate chips (I use enjoy life vegan chocolate chips)
      • lemon juice (optional)
      • Toppings:
      • ~crushed graham crackers
      • ~sunflower seeds
      • ~shredded coconut
      • ~raisins
      • ~pistachios
      • ~mini-marshmallows
      • ~peanuts
      Instructions
      1. Line a baking sheet with parchment paper, set aside.
      2. Melt chocolate in a double boiler or microwave, dip apple slices in chocolate and place on parchment paper.
      3. Add toppings of choice and let cool until chocolate has hardened, enjoy!
      4. ~to prevent browning of apples, spritz apples with fresh lemon juice~

       Be sure to use dark chocolate because it has less sugar than milk chocolate and is higher in antioxidants!

      I topped these with graham crackers, coconut and sunflower seeds, but don’t stop there!  Raisins, pistachios, mini-marshmallows, peanuts would all taste great!
