It doesn’t get easier then this! It honestly took me less than 2 minutes this morning to throw the ingredients into the crock pot, turn the switch on low and dinner was ready for us when we got home! Not only is this a nutritious meal, but it is incredibly “budget friendly” weighing in at under $0.50 per serving! You can’t argue that it’s expensive to eat healthy now!
Crock Pot Korean-Style Black Beans
2 cups dried black beans
6 cups water
1/2 cup Bragg’s amino acids (you can use soy sauce or tamari)
1 tablespoon brown sugar
2 tablespoons toasted sesame oil
1 piece of kombu (optional)
Cooked quinoa or brown rice
Scallions, chopped
-Mix dried beans, water, bragg’s amino acids, brown sugar and toasted sesame oil in the crock pot, add a piece of kombu, cover and cook on low for 6-8 hours or until beans are tender.
-Serve warm over quinoa or brown rice, top with fresh chopped scallions and enjoy!
Prepare this meal on a monday and it will provide you with left-overs for the rest of the week!
