Start your weekend off right with these little goodies!
Coconut Fudge Truffles
1 cup cashews
1 cup dates
2 tablespoons pure unsweetened cocoa powder
½ teaspoon almond extract
1/3 cup unsweetened coconut
1 teaspoon coconut oil
Place all ingredients in a food processor and blend on low until a paste is formed. Be patient, this may take a while! Scrape down sides and add a teaspoon of water as needed to moisten mixture. When all ingredients are nicely blended, remove “dough” and roll into balls. Store in refrigerator.
