This smoothie is pretty darn good, but ‘m pretty sure anything would taste amazing with whipped coconut cream on top!

Peaches…not in season right now, but when they are…stock up and freeze them for later use!

Peaches are loaded with carotenes, flavonoids, lycopene and lutein, which are beneficial in warding off macular degeneration, cancer and heart disease.  They are on the EWG dirty dozen list, so buy organic when possible!

Hemp seeds are added for a healthy dose of omega 3 fatty acids, iron, fiber and calcium…they also lend a slightly nutty flavor!

To make coconut whipped cream, use whole fat coconut milk from a can.  I like using the organic/non-GMO brand Native Forest, which I buy from www.vitacost.com.

It’s essential that you use whole coconut milk and not low-fat coconut milk!  Place the can in the refrigerator for a few hours or over night…the longer it is refrigerated the better!  Open the can and scoop out the “cream” and reserve the coconut liquid for another use such as smoothies!  Place the cream in a medium sized bowl, add a few tablespoons of sweetener such as maple syrup or agave syrup and a drop of pure vanilla extract if desired.  Using a hand-held mixer, whip until fluffy and peaks form.

Try not to eat the whole bowl!

Ingredients
  • 1 cup of soy, almond or coconut milk
  • 1 cup frozen peaches
  • 2 dates, pitted
  • 2 tablespoons hemp seeds
  • ½ teaspoon pure vanilla extract
  • For Coconut Whipped Cream:
  • 1 can organic whole fat coconut milk
  • 2-3 tablespoons pure maple syrup or agave syrup (depending on how sweet you like it!)
  • drop of pure vanilla extract
Instructions
  1. Smoothie: Place all ingredients in a high-powered blender and blend until frothy. Top with coconut whipped cream, coconut flakes and sliced fruit as desired.

To kick off my 35th year I’m indulging in this special birthday Banana Split Cream Pie!

I love birthdays…even my own regardless of what age I am turning.  I couldn’t wait to say goodbye to my 20’s and I’m looking forward to my 40’s, so 35 is a perfect place to be for the moment!

To complete a wonderful birthday weekend I made this easy, no-bake dessert…whipped raw cashews, bananas and coconut cream in a graham cracker crust and jazzed up with all the banana split sundae toppings imaginable!  I was so excited to find natural, no dye added maraschino cherries at whole foods!

The graham cracker crust was so simple to make, just crushed graham crackers and melted coconut oil mixed together and pressed into an 8 inch tart pan.  The banana cream filling is from one of my favorite blogs Minimalist Baker.  The pie is smothered with coconut whipped cream, chocolate sauce, bananas, walnuts and finished off in perfect Banana Split fashion with a cherry on top!

Toasted coconut, fresh strawberries and caramel sauce would be great additions too!

Ingredients
  • For the Graham Cracker Crust:
  • 1.5 cups crushed graham crackers
  • 4 tablespoons melted coconut oil
  • For the Banana Cream Filling:
  • 1¼ cups raw cashews (soaked overnight)
  • 3½ tablespoons coconut oil, melted
  • ¼ cup pure maple syrup
  • 1 banana, sliced
  • ⅓ cup full-fat coconut milk
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons lemon juice
  • For the Banana Split Toppings:
  • fresh banana slices
  • chopped walnuts
  • coconut whipped cream (or your favorite whipped topping)
  • chocolate sauce
  • cherries
Instructions
  1. ~Soak cashews in water overnight or for at least 6 hours!~
  2. Crush graham crackers into a fine powder. I used a food processor and pulsed until the right consistency. Transfer to a medium bowl and stir in melted coconut oil until well combined. Press firmly down into an 8 inch pie plate or tart pan. Place in the freezer to set.
  3. Meanwhile, drain cashews and place into a food processor. Add melted coconut oil, maple syrup, banana slices, coconut milk, vanilla and lemon juice. Blend until smooth and creamy scraping down sides as needed. (this may take a few minutes!) Pour into pie crust and use a spatula to smooth. Place back into the freezer for 3-4 hours or until set.
  4. Once set, let thaw for a few minutes for easier slicing. Add desired toppings and enjoy!
  5. Store in the freezer!

Fluffy, silky and decadent…um, yea!

No bake, few ingredients and simple to make…can it get any easier!?!

Back in the day my best friends and I would go to Friendly’s and get their mega Reese’s Pieces Sundae, remember those???  I can only imagine the ingredients used, I’m sure they were not the healthiest!  Here is something that’s even better tasting, and not so horrible for you!

Ingredients
  • 1 pound block of silken tofu (organic, Non-GMO, such as Nasoya)
  • ⅔ cup all natural peanut butter
  • ⅓ cup pure maple syrup
  • ½ teaspoon pure vanilla extract
  • ½ cup chocolate chips (I use Enjoy Life), melted
  • 1 cookie pie crust, homemade or pre-made (see recipes below!)
  • For the chocolate drizzle:
  • ½ cup chocolate chips
  • 1 tablespoon coconut oil
Instructions
  1. Add tofu, peanut butter, maple syrup and vanilla to a food processor. Blend until whipped and creamy.
  2. Melt chocolate chips in a double boiler or microwave. Add melted chocolate to food processor and blend until well combined.
  3. Pour mixture into pie crust and place in refrigerator for 2-3 hours or until chilled.
  4. For chocolate drizzle sauce:
  5. Melt chocolate and coconut oil in a double boiler or microwave.
  6. Serve pie with chocolate drizzle (optional, but well recommended!)

Chocolate Peanut Butter Cream Pie ~vegan~ Fluffy, silky and oh so decadent!

I used a pre-made chocolate cookie crust…no judging!  Arrowhead Mills makes a vegan graham cracker crust and Mi-Del makes a gluten free chocolate cookie crust.  If you want to make your own, it’s simple!  All it takes is a sleeve of graham crackers of your choice, crushed and mixed with a few tablespoons of melted coconut oil or vegan butter.
