spiced lentils ~freezer meal~

- 2 cups red lentils, rinsed
- 4½ cups water
- 1 cup organic canned diced tomatoes
- ¼ cup raisins
- 3 tablespoons onion, minced
- 3 cloves garlic, minced
- 1½ teaspoons fresh ginger, grated
- 1 teaspoon coriander
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ½ teaspoon sea salt
- ¼ teaspoon pepper
- ¼ teaspoon cinnamon
- 1 bay leaf
- Place all ingredients in a crockpot and cook on low for 8 hours or on high for 4 hours.
- Let cool and scoop individual portions into ziplock bags. Place in the freezer and thaw as needed.
- Top with fresh cilantro, roasted pumpkin seeds and serve with brown basmati rice, quinoa or naan, enjoy!
