Avocado and Arugula White Bean Hummus Makes around 2 cups
  • ½ avocado
  • 1 cup arugula, packed
  • ¼ cup toasted pine nuts
  • 2 cloves garlic
  • ¼ cup water
  • 1 can (15 oz) white beans, drained and rinsed
  • ½ lemon, juiced
  • 2 tablespoons extra virgin olive oil
  • sea salt and pepper to taste
  1. Place all ingredients in a food processor and blend until creamy. Adjust seasoning as needed. Serve with gluten free crackers and enjoy!
