- ½ avocado
- 1 cup arugula, packed
- ¼ cup toasted pine nuts
- 2 cloves garlic
- ¼ cup water
- 1 can (15 oz) white beans, drained and rinsed
- ½ lemon, juiced
- 2 tablespoons extra virgin olive oil
- sea salt and pepper to taste
- Place all ingredients in a food processor and blend until creamy. Adjust seasoning as needed. Serve with gluten free crackers and enjoy!
