In keeping with the green theme…here is a shamrock inspired Mango Matcha Green Smoothie!

I feel like I’m late to the matcha party, but I just discovered it since being pregnant and giving up my morning cup of jo.  Matcha is a powdered form of green tea.  It is the only form of green tea that uses the whole tea leaf giving it more antioxidant power than traditionally brewed green tea.  The most famous pholyphenol found in matcha is EGCG (epigallo-catechin-gallate), which shows promise for lowering cancer and heart disease risk.  Matcha does contain caffeine, but far less than a cup of coffee.

Matcha is usually mixed into hot water or steamed milk for a morning drink, but I blended it into a smoothie!  I found matcha powder at Whole Foods in the tea section.   The one I bought was slightly sweetened.  If you have unsweetened matcha, try blending in a few dates if needed for sweetness.

Mango Ginger Lassi, a super healing drink for the digestive system!

Mango Ginger Lassi ~vegan~

A lassi is a traditional drink in India.  It is yogurt based and often has turmeric, rosewater or saffron added to the mix.  I added a small knob of fresh ginger root, which gave this lassi a little spice!  The combination of mango, fermented “yogurt” and ginger is a great way to boost the health of your digestive system.  Mangos are a great prebiotic, which will feed the probiotics found in the yogurt and the ginger is a great healer of digestive distress.

Use any type of plain yogurt you prefer, I used plain soy yogurt for a vegan version.

Ingredients
  • 1 cup plain yogurt of your choice (coconut, soy, milk)
  • 1¼ cup frozen mango chunks
  • ½ cup milk of your choice
  • 2 dates, pitted
  • ⅛ teaspoon pure vanilla extract
  • ½ inch knob of fresh ginger root
Instructions
  1. Place all ingredients in a high-speed blender and blend until creamy.
  2. Enjoy!

I have no idea where the 3 years have gone since he was born, but I do know that every day is better than the one before with him in our lives.  It’s truly spectacular to watch him development into a little gentleman, I couldn’t be more proud of him!  Noah has brought more joy and laughter into our lives than we could have ever imagined possible.  I am one lucky mom :)

Makes 1 large smoothie

Ingredients
  • 1 cup milk of your choice (rice, soy, hemp, etc.)
  • 1 frozen banana (or one banana and a few ice cubes)
  • ¼ cup cashews
  • ⅛ teaspoon pure vanilla extract
  • pinch sea salt
  • whipped topping of your choice (soy or rice whip) and sprinkles for topping
Instructions
  1. Place all ingredients into a high speed blender and blend until milky.
  2. Top with whipped cream and sprinkles and enjoy!

As most kids are, Noah is mesmerized by sprinkles.  Although not my favorite thing to include in a recipe, I can’t deny him on his birthday!
