If you don’t have a high-speed blender such as a vitamix, start by blending the greens and liquid alone before adding the rest of the ingredients.  Also, start with using baby spinach leaves, which is much easier than kale for an ordinary blender to tackle!  I like to add a few tablespoons of protein, which will keep you full for longer!

Ingredients:

Liquid:  Coconut water, soy milk, almond milk, hemp milk

Greens:  Baby spinach, kale, collard greens, beet greens

Fruit:  Banana, mango, pineapple, berries, peaches

Protein:  Peanut butter, almond butter, cashew butter, sun butter, protein powder, hemp seeds

Ingredients
  • 2 cups liquid (I use 1 cup coconut water + 1 cup almond milk)
  • 2 cups greens (spinach or kale)
  • 2 tablespoons peanut butter
  • 2 frozen bananas
  • dash cinnamon
Instructions
  1. Place all ingredients in a high-speed blender and blend until smooth. If you don't have a blender such as a vitamix, blend greens and liquid before adding peanut butter and frozen banana.
  2. Sip and enjoy!

I’ve been trying to include a smoothie (or smoothie bowl) and a salad to my diet every day for increased energy and immune support.  I need all the help I can get these days!  The USDA recommends 5-13 servings of fruits of vegetables per day for optimal health.  (Aim for 13 for best results!)  This may seem like a daunting task to undertake.  However, if you get into the habit of adding a smoothie and salad to your day it’s a piece of cake!

This smoothie has turned into one of our favorites as it is super refreshing and energizing!  Tropical fruit is blended with hemp seeds and turmeric…yes, turmeric!  The same spice that is typically used in savory recipes such as curries.  Turmeric is insanely high in anti inflammatory compounds, namely curcurmin.  This compound has shown promise in improving cardiovascular disease, diabetes, digestive disorders, Alzhiemer’s disease and delayed cell growth of certain types of tumors.  Turmeric has an earthy, spicy and bitter taste.  However, it’s practically undetectable in this recipe.  If you’re not sure about adding it to smoothies, try it in soups, stews, curries or rice dishes!

  • 1 banana
  • 2 cups frozen mango
  • 1-2 tablespoons hemp seeds
  • ⅛-1/4 teaspoon turmeric
  • 6 oz pineapple juice
  • Additional Add-Ins:
  • coconut oil
  • coconut flakes
  • baby spinach
  • chia seeds
  • oats
  • cashews
  • almond butter
Instructions
  1. Add all ingredients to a blender and blend until smooth.
  2. Enjoy!

Hemp seeds add a balance of protein, healthy fat and fiber.  You can add a dollop of coconut oil for an extra dose of healthy fat or a scoop of your favorite protein powder to hold you over longer.  I added Dang coconut flakes because I’m obsessed with them!  Other add-ins are old-fashioned oats, chia seeds, cashews or almond butter.

You can always add spinach and transform this into a green smoothie, which I highly recommend!

This month’s Recipe Redux asked us for our favorite way to make use of the veggies found in the garden, CSA or local farmers’ market….my contribution is Kale Cubes!

By this time of year it may be difficult to keep up with eating the amount of greens your garden is pumping out.  Kale Cubes are the perfect solution!  Blend excess garden greens such as kale, spinach or collards, freeze and use for green smoothies on the fly!  This is also a great way to use up any store-bought greens before they go bad!

I blended these kale cubes with coconut water because I wanted them for smoothies.  But, you can also blend greens with plain water or broth to have on hand for soups, stews or pasta sauce!
