Your traditional buffalo chicken wings weigh in at around 430 calories and 29 grams of fat per 1 cup serving. These are a measly 150 calories and 6 grams of fat per 1 cup serving! Plus, they are fiber filled and antioxidant rich!  For a vegan version sub Earth’s Balance for the butter!

Serve these alongside the most delicious Greek dressing for your Labor Day cookout!  It’s a fun finger food that is family friendly, kids love eating food off of skewers!  I stacked cherry tomatoes, rigatoni pasta, fresh basil leaves, chunky cut cucumbers, black olives and avocado, but the options are limitless!  If you have cheese lovers in the family add mini mozzarella balls for a caprese style salad!

Pasta Salad on a Stick, putting a spin on your classic pasta salad! Makes 10 skewers

Ingredients
For the Pasta Salad Skewers:
  • 20 fresh basil leaves
  • 1 cup black olives
  • 1 cucumber, cut in large-bites
  • 20 cherry tomatoes
  • 2 avocados, cut in cubes
  • 1 cup rigatoni pasta, cooked according to package and cooled
  • 10 wooden skewers
For the Greek Dressing:
  • ½ cup extra virgin olive oil
  • ⅔ cup red wine vinegar
  • 1¼ teaspoons garlic powder
  • 1¼ teaspoons dried oregano
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon dijon mustard
Instructions
For the Pasta Salad Skewers:
  1. Assemble skewers adding each of the ingredients as desired.
For the Greek Dressing:
  1. Whisk all ingredients together
Drizzle skewers with dressing or serve on the side. Enjoy!

    Vegan Mexican Street Corn

    Mexican Street Corn, grilled sweet corn sprinkled with cayenne pepper, drizzled with chipotle spiked sauce and topped with fresh cilantro…it’s one spicy bite!

    I recently fell in love with Mexican Street Corn after having it at Joey’s food truck, a killer little spot on the beach that serves up tasty tofu tacos, rice and beans and spicy Mexican street corn.  It’s been my family’s Monday night spot the whole summer until now…for some reason our town has something against food trucks and shut it down :(  We are all heart broken and jonesing for some street corn!  So, this Monday I took matters into my own hands and tried to construct my own Mexican street corn.  It’s not quite as good as Joey’s, but it will do for now!

    Traditional street corn is served with cotija cheese, a seasonal cheese named after a town in Mexico.  To keep this recipe vegan friendly I left the cheese off and used vegan mayonnaise in place of regular mayonnaise for the chipotle sauce.  Beware, this sauce is hot, hot, hot…so go lightly if you’re not ready for the heat!

    Ingredients
    • 4 ears of corn
    • extra virgin olive oil
    • sea salt
    • cayenne pepper
    • For the Chipotle Mayo:
    • ¼ cup vegan mayo
    • 1 chipotle pepper in adobo sauce
    • 1 tablespoon lime juice
    • fresh cilantro to garnish
    Instructions
    1. Drizzle shucked corn with olive oil and sprinkle with sea salt and a small dash of cayenne pepper.
    2. Place on a hot grill and rotate a quarter of a turn ever 2-3 minutes until corn is tender and has light grill marks, around 10 minutes.
    3. Meanwhile, place mayo, chipotle pepper in adobo sauce and lime juice in a food processor. Blend until creamy.
    4. Drizzle hot corn with chipotle mayo and garnish with fresh cilantro leaves.
    5. Enjoy!
