I let my almost 4 year old take the lead when concocting this smoothie and I think he did pretty well!  If given the opportunity he would make smoothies everyday.  I admit, sometimes it’s a hassle and I hate cleaning out the blender, but I can’t say “no” to getting him to drink multiple servings of fruits and vegetables before noon!

This smoothie is so super heathy and loaded with antioxidants, which will boost their little germ fighting immune systems!  It also contains fiber and healthy fats that will fuel them up for the day!

Not too sure if your kid will dig hemp seeds?  

Use a different source of healthy fat such as coconut oil, avocado or walnuts.  You can even throw in some chia seeds, which are practically tasteless!

Ingredients
  • ½ cup milk of your choice (soy, hemp, almond, etc.)
  • ½ cup orange juice
  • 1 banana
  • 1 cup frozen blueberries
  • handful baby spinach
  • 1 heaping tablespoon hemp seeds
Instructions
  1. Place all ingredients in a high-speed blender and blend away!

I’m reluctant to let go of summer ingredients and move on to fall flavors.  While the fall is extremely beautiful in the North East, I’m always going to be a warm weather girl.  I try to embrace the crisp air and changing colors, but my enthusiasm never lasts too long!  Come November I will be longing for summer days filled with dips in the ponds, fresh fruit, locally grown vegetables and the beach.

With the last of the zucchini and the blueberries I had stashed in the freezer, I came up with a gluten-free and vegan cake perfect for snacking!  Oats, flax, zucchini, berries and a crumple topping make for a wholesome old-fashioned cake.  I used coconut sugar, which has a slightly sweet flavor.  If you do not have coconut sugar feel free to substitute with regular sugar, just note it will make for a sweeter cake.  I make my own oat flour in a vitamix, but you can always use store-bought oat flour.

Ingredients
  • 2 tablespoons flax meal + 5 tablespoons water
  • 1.5 cups grated zucchini
  • ¾ cups coconut sugar
  • ¼ cup of milk of your choice (I used soy milk)
  • ¼ cup unsweetened apple sauce
  • ¼ cup olive oil
  • 1 teaspoon vanilla
  • 1.5 cups all purpose gluten free flour (I used bob's red mill)
  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ½ cup blueberries
For the crumbled topping:
  • ½ cup old fashioned oats
  • ½ cup oat flour
  • ¼ cup light brown sugar
  • pinch sea salt
  • 2 tablespoons butter (I used earth's balance)
Instructions
  1. Preheat oven to 300 degrees. Lightly oil or spray a 8x8 baking pan with all natural cooking spray, set aside.
  2. In a small bowl make flax eggs by mixing together flax meal and water. Let sit for 10 minutes or until a gel is formed.
  3. In a large bowl add flax eggs, zucchini, sugar, milk, apple sauce, olive oil and vanilla, stir until well combined. In a separate bowl sift together gluten free flour, oat flour, baking powder, baking soda, cinnamon and sea salt. Combine wet and dry ingredients and fold in blueberries. Pour into 8x8 pan.
  4. Meanwhile, make crumbled topping by adding oats, oat flour, brown sugar and salt to a bowl. Cut in butter until mixture is crumbly. Evenly spread on top of cake.
  5. Place in oven and bake for 45-60 minutes or until knife inserted comes out clean.
  6. Let cool, cut and enjoy!

A few weeks ago on a road trip to Maine we made a pit stop at Whole Foods for a healthy lunch.    Noah and I split a smoothie for dessert that I recreated today!

Are you planning a summer road trip?  

Here are a few ideas to keep you healthy on the road!

Research “smart” stops along the way:  See if there are grocery stores, juice bars or sandwich shops off of the route you are taking.  Example: If you stop at a grocery store you can buy fresh fruit, hummus and pita for a healthy lunch!  Some grocery stores may even have a salad bar!  Much healthier than a whopper and fries and won’t leave you slumping and sleepy at the wheel!

Pack “smart” snacks:  Bring a variety of sweet, salty and crunch foods!  “Smart” snacks include popcorn, lara bars, fresh fruit and whole grain or gluten free pretzel sticks.

Stay hydrated:  Bring plenty of clean water in BPA free bottles or mason jars.  Add fresh lemon which will help you stay alert and refreshed!

Don’t fill your belly where you fill your gas tank!  Nothing healthy usually comes out of a gas station!  If you find yourself in a pinch and a gas station is your only option, find foods with minimal ingredients and an expiration date!  Whole food snack options include nuts, fruit, granola and yogurt.

  • 2 kale leaves (~1 cup) or baby spinach
  • ½ avocado
  • ½ teaspoon spirulina
  • ½ teaspoon vanilla powder (optional, can also use vanilla extract)
  • 3 dates or sweetener of your choice
